A contemporary expression of Japanese hospitality.
The approach
Long Ng Nozawa creates contemporary Japanese cuisine grounded in seasonality, precise technique and the intimacy of the counter.
British produce meets the discipline of sushi and kaiseki—not as fusion, but as a personal language shaped between London and Japan.

Profile
As opening Head Chef of Taku in Mayfair, Long led the counter and team as the restaurant achieved a Michelin star within four months, retaining it throughout his tenure.
His experience includes time training in Japan at Kagurazaka Ishikawa and staging at Nihonbashi Kakigaracho Sugita—two of Tokyo's most respected expressions of kaiseki and sushi.
